Pesto Chicken

1 Chicken Breast cut into pieces
1 Red Pepper chopped
5 Mushrooms sliced
2 Spring Onions sliced
2 tbsp Black Olives
1 Chilli sliced
2 Tomatoes quartered
2 tsp Green Pesto (home made preferably)
Wipe of Olive Oil to pan


In a hot pan wiped with olive oil begin cooking chicken, then before cooked completely add all other ingredients. I add pesto last. Once chicken is cooked and all other ingredients heated through, serve!
For those interested in calories - approx 450.

This is delicious and so simple. I mention using home made pesto which is easy to make. 
Easy recipe without cheese.
2 cups of washed fresh herb mix - Basil, Coriander, Parsley and Mint
1/2 cup Pine Nuts
2 cloves of Garlic
Extra Virgin Olive Oil 1/4 cup or enough to create a smooth paste
Mix all ingredients in a food processor or pestle and mortal adding oil slowly and last to make a smooth paste. Add rock/sea or Himalayan  salt to taste if needed.
Store in fridge for hour before use for flavours to develop together.
